Recipe: Simple Mediterranean Chicken with Tomato Sauce
Ingredients
For the tomato mixture:
4 tbsp tomato paste
1½ cups water
⅛ tsp sweet paprika
⅛ tsp pepper
⅛ tsp salt
2 tbsp Chef’s Selection Classic - Delicate (black and white tin)
For the olive oil marinade:
⅛ tsp sweet paprika
⅛ tsp pepper
⅛ tsp salt
½ cup Chef’s Selection Classic—Delicate (black and white tin)
dry herbs mix (parsley, dill, basil), to taste
For the chicken
6 bone-less chicken thighs, skinned
¼ to ½ cup PJ Kabos Chef’s Selection Classic, for browning and cooking chicken pieces (personal taste determines the amount used)
¼ tsp salt, or to taste
¼ tsp pepper, or to taste
¼ tsp sweet paprika, or to taste
For the pasta
spaghetti or penne rigate, whichever is preferred
For plating
oregano, fresh, to taste
Preparation
For the tomato sauce: In a measuring cup, small bowl or beaker measure in the ingredients and mix with a spoon. Set aside.
For the olive oil marinade: In a small bowl, mix the ingredients. Marinate the chicken pieces for a few minutes (or several hours if placed in the refrigerator for later use).
To cook the chicken: To a large skillet, add Chef’s Selection Classic. Add the marinated chicken and brown nicely on both sides. Add the tomato sauce, return to fire, turn low and let it slowly simmer for 1 hour or until the red sauce is reduced to a thickened (and delicious!) mixture of tomato, herbs and olive oil.
Prepare pasta: Twenty minutes before the chicken is finished prepare pasta of preference.
Serve the chicken and pasta side by side and cover both with a few tablespoons of red sauce and fresh oregano sprinkled on top.
