A Greek Salad. Is there anything that tastes more like summertime? We think not! So naturally, this has to be the first recipe we post. It’s easy and simple, allowing the juiciness of the fresh fruits and veggies and the richness of PJ Kabos Family Reserve Organic to stand out. Granted there are more “traditional” salad versions out there, but this is the one that is most likely to grace our family table.
INGREDIENTS
2 tomatoes, chopped into bite sized pieces
1 bell pepper (we used orange, but any color is great)
1 cucumber, sliced
1/3 cup red onion, thinly sliced
1/3 cup Kalamata or Greece olives (whichever you prefer)
1/3 cup fresh spearmint leaves
1/3 cup fresh basil leaves
1 cup lettuce leaves, chopped (not traditional, but we like adding it)
5 ounces feta cheese, cubed
2/3 cup (or more) PJ Kabos Family Reserve Organic Extra Virgin Olive Oil
Oregano, to taste
Salt, to taste
METHOD
In a deep bowl, arrange tomatoes, bell pepper, cucumber, red onion, olives, spearmint, basil, lettuce and feta cheese.
Drizzle with a generous amount of EVOO and gently toss to coat all the fruits and vegetables.
Add a few generous pinches of oregano and add salt to taste.
Serve and enjoy!
